Aged at least four years in bourbon, oloroso sherry and new oak casks, this expression is a blend of grain and triple-distilled malt — "gently balanced," as the brand puts it, with peated malt.

Poppin’ on the nose. There’s a ton going on here. Apples, pears, toffee, some butterscotch, strong oak and a hint of lactic, lemon curd, pepper and some clove. A light pop of peat, but not a smoky, char-driven nose in the slightest.
The palate is moderate with a good bit of complexity, honey, honeydew, citrus zest, cedar, some charred wood and a hint of salinity and peat. It drinks a bit richer than the 43% ABV would lead you to believe.
Long finish. The peat shows a bit more here but is ultimately pleasant, well integrated and adds layers. Sweet cream, honey, almond, citrus zest, cedar, pepper and light oak roll through with a faint, peaty undertow.
Quite pleasant and a very good expression from a new brand. I like that there’s more going on here than just a peach ring-heavy, pot still, ex-bourbon release, and it’s quite an interesting pour.
