Buffalo Trace Prohibition Collection: Cove Spring Barrel Proof Wheated Bourbon is an uncut, unfiltered Kentucky straight bourbon produced at Buffalo Trace Distillery in Frankfort, Kentucky. Part of the third annual Prohibition Collection released in 2026, it honors brands legally bottled at the distillery during Prohibition. Named after the spring that supplied water to the distillery’s early operations, it is bottled at 120.2 proof (60.1% ABV) and available exclusively as part of the five-bottle collection, which retails for $999.99.

The nose is huge, decadent, creamy and dessert-forward. Big butterscotch note plus loads of sugar cookies, banana cream, buttercream.
Quite a bit of heat on the palate, which is viscous. dense and very flavorful. Banana bread, vanilla wafers, cherries, cappuccino, leather, cinnamon, sassafras, clove and toasted oak.
The finish is long. Gingerbread and cinnamon lead the finish, moving into sassafras and cherry cola, and then it moves into a nice buttercream-cherry profile that hangs around for a while, eventually giving way to sweet tobacco and leather.
A big, bruising, sweet and satisfying wheater.
