Boann Distillery Pedro Ximenez Cask Single Pot Still Irish Whiskey is produced in Ireland from a mashbill of malted and unmalted barley, oats and rye. Initially matured in Oloroso sherry hogsheads from Bodegas Garvey in Jerez, Spain, it is finished in Pedro Ximenez butts from Malaga that were part of the PX Solera system for 60 years. Bottled at 47% ABV, it is priced at around $68.

Sweet nose full of honey, raspberry, praline, cherry, brioche
On the palate, this whiskey is very tasty and well balanced. Fruity and syrupy notes play well with a darker and nuttier profile. Raspberry, almonds, more brioche, pie crust, graham cracker, tobacco.
The finish is excellently balanced once again. Walnuts and almonds mingle with syrupy, floral sherry, which transitions into that brioche and tobacco profile.
An extremely pleasing Irish whiskey and a superb example of PX sherry finishing done well.
