Blue Note Honey Bourbon begins by finishing straight bourbon whiskey in American oak barrels repurposed to produce honey. The bourbon is then returned to the honey-infused casks for additional aging. Crafted in Memphis, Tennessee, it is aged a minimum of three years from a mash bill of 70% corn, 21% rye, and 9% malted barley, and bottled at 115.7 proof, unfiltered. According to the brand, the bourbon offers aromas of vanilla, cedar, and nut, flavors of leather, pear, cedar, wildflower, and honey, and a gentle, warm finish with lingering notes of wildflower and honey.
As a general sipper’s bourbon, I think the grade I gave Blue Note Honey Cask is solid. However, I think the bottle truly shines as a dessert bourbon, something to trot out as a digestiv.
