Bite Me Wellness Tonic draws from a family recipe created by founder Nikola and later released commercially after originally serving family and friends. The tonic contains organic unfiltered apple cider vinegar with “the mother,” New Zealand Manuka honey, ginger juice and extract, Hydromeric turmeric, Bioperine black pepper extract, cayenne, organic Persian lime juice and organic lemon juice. According to the producer, Hydromeric turmeric offers enhanced absorption compared with standard curcumin products, while Bioperine supports nutrient uptake. The formula contains no artificial additives and comes packaged in a 475 mL glass bottle retailing for around $24.97.

  • I like this one a lot. Bite Me Tonic is primarily marketed as a gut health product but also has clear use in creative nonalcoholic cocktail mixology. It delivers a tart, complex, vinegar-driven character similar to a shrub and recalls Giffard’s zero-proof liqueur range, which features white wine vinegar as a dominant note. With its tangy profile, it will also appeal to those who enjoy kombucha.

  • Nose:

Strong apple cider vinegar on the nose with hints of cinnamon, fresh ginger, clover honey, red apple skin, fermented white tea and unripe green apple.

  • Taste:

The palate opens with sour apple juice, white vinegar, stewed fruit, apple cider vinegar, light earthy turmeric and honey. Orange, lemon, lime, black pepper and cherry follow through the midpalate alongside tingly, warming ginger.

  • Finish:

Short, sweet and sour, the finish closes with more vinegar, zippy ginger and honey.

  • Overall:

I like this one a lot. For mixing and simple mocktails, it works well with seltzer water and, if available, a rosemary sprig or grapefruit wedge garnish. It also pairs well with lemonade and nonalcoholic gin or, as the brand suggests, can be enjoyed straight as a shot.
