Grapes are harvested, fermented into full-strength wines -- and then passed through a spiral cone for alcohol removal. A gentle evaporation process eliminates the alcohol without heat, preserving the wine's aromas and flavors. This process continues until the alcohol content drops below 0.5%, after which the wine is bottled.
