  • While corn is a large percentage of the overall mashbill, it never dominates, instead helping to contribute to a nice base and mouthfeel.

  • This is a great release from the Discovery Series from Bardstown Bourbon Company. I really appreciate what they're doing here. This is a very complex blend. The Canadian component adds a lot of sweetness that we wouldn't otherwise see. I love the combination of the minerality and those newer fruits like apples, pears and baked apples. Overall, this is a definite buy, and I love this one a lot.

  • Nose:

Big and sweet on the nose at first, there's big red apple and red cherry, sweet toffee, buttercream, nougat and crème brûlée, sweet Oak and a bit of orange marmalade.

  • Taste:

On the palate, this is big and bold. It is flavorful. It's loaded with orange peel, candied ginger, spiced apples, baked apples, maple, cinnamon and nutmeg. This is rich and oaky. There's a bit of tannin, minerality and crushed stone. If you like notes like cocoa, waffle cone, graham cracker, orange zest, lemon zest, those all play together nicely. On the back palate, it is enticing long, and full of tannin and sweetness balanced with Oaky tannins.

  • Finish:

This is a long finish. It is full of caramel cream, it is full of minerality and orange peel, candied ginger, once again apples, a touch of dark chocolate and bitter tannin.
