Amador Hop Whiskey Chardonnay Barrel Finish is a limited-edition California whiskey produced by Amador Whiskey Co. in collaboration with Charbay Distillery in Ukiah, California. This ninth release blends 90% two-row barley whiskey with 10% hop-based whiskey distilled from craft IPA beer. The barley whiskey is aged 2.5 years in French oak barrels, then combined with the hop-infused whiskey and finished for six months in Napa Chardonnay wine barrels. The whiskey is bottled at 96 proof and produced in a small 10-barrel release, totaling 325 cases.

Per the distillery, the whiskey has aromas and flavors of honey, dried fruit, roasted barley, vanilla and spice, with integrated hop notes. Neat, it delivers caramel, cloves and vanilla on the palate with a long finish. Over ice, the IPA flavors are more pronounced, blending with classic whiskey notes. The expression is designed for slow sipping and can be cellared for decades to deepen its character, according to the brand.

  • The hops aren’t as powerful on the nose as they are on the palate. It is also quite smoky, like you’re sitting around a campfire and the taste has gotten into the drink. Like an un-peated Scotch. It gets smoother on subsequent sips, but—like a campfire you need to tame—would benefit from a splash or two of water.
