Alambique Serrano Cartier 30 is an unaged rum produced in Santa Maria Tlalixtac, Oaxaca, by the Krassel family, using organic java sugarcane grown at altitudes up to 4,000 feet. Distilled from fresh cane juice, it is named after a specific alcohol level on the Cartier scale, roughly translating to 70% ABV. The rum is naturally fermented and distilled in a custom-built still designed by Max Krassel in the 1930s. Bottled at 70.3% ABV with no added sugar or water, Cartier 30 retails for about $64.99.

  • Nose:

    Huge nose, loaded with olives, minerality, slate, lemon lime, a meaty, vinegar-y funk and stacks of leather, sweet citrus and honey. Supremely savory, gorgeous and rich.

  • Taste:

    Huge palate, both in texture, viscosity, and flavor. Drinks wildly underproof, perhaps dangerously so. Green olive, sweet cream, zesty cracked pepper, salinity, savory red wine vinegar, leather, a hint of ginger and gobs of sweet cane.

  • Finish:

    Long finish, heavy and rich. It’s savory all the way through, and a wildly unique exit.

  • Overall:

    Cartier 30 is far from what I expected, as it’s a savory juggernaut of a rum, but it’s delightful, unique, and belongs on your shelf.
