Produced in Santiago Matatlán, Oaxaca, Mexico, Abrojo Artesanal Dry Gin is distilled by maestro destilador Gonzalo Martinez. Spent agave fiber (bagasse) from his family’s mezcal production is re-milled by hand with a wooden mallet, combined with spring water and refermented with wild yeast. It is distilled once on a copper still, then redistilled with 15 locally sourced botanicals, including juniper, hoja santa, basil, cinnamon, guava, orange and lime peel, eucalyptus, lemongrass and mint. Rested in glass for one year before bottling, it is bottled at 45% ABV.
