From Pasture to Palate: Wagyu Producer Releases UK’s First Bottled Fat-Washed Gin

In a pioneering move within the gastronomic and spirits landscapes, Warrendale Wagyu, a Wagyu beef producer recognized for its dedication to sustainably sourced meat, has unveiled the United Kingdom’s first bottled fat-washed gin.

As reported by York Press last week, the unique production process for the new beefy booze, dubbed WA-GYN, involves a 48-hour wash with molten Wagyu fat, conducted on one of the firm’s Lancashire farms. Warrendale Wagyu expressed that the resulting gin offers a sensory experience with umami fragrances and a dominant juniper flavor, paired with hints of ruby grapefruit, lemongrass and pink peppercorn. A triple filtration process promises a silky mouthfeel, which is claimed to “come alive” when the spirit is combined with tonic water.

Founded in 2017 as a family farming business, Warrendale Wagyu collaborates with over 750 farmers across the U.K. to create F1 Wagyu, a crossbred dairy cattle breed amalgamating full-blood Wagyu genetics. Tom Richardson, the Managing Director of Warrendale Wagyu, expressed the brand’s commitment to innovation and asserted that WA-GYN is a must-try for spirit enthusiasts.

“We strive to be at the forefront of innovation which is why we have launched the first fat washed gin available in the UK,” Richardson shared, per York Press. “With the past year seeing great success for the business, it seemed right for us to expand our use of Wagyu into new areas.”

“Whilst it is uncommon for gin to be fat-washed, we spotted a gap in the market and have carefully combined juniper with flavoursome fruits and herbs to create a drink that tastes fantastic. For those celebrating Ginuary or that enjoy gin in general, this needs to be added to your list as it will leave you impressed with the luxurious taste.”

Resting at 44% ABV, WA-GYN is now available for online purchase at £30 (about $38) for a 20-cl bottle or £55 ($67) per 70-cl bottle.
