Four Pillars Pays Homage to Pub Culture With the Highly Anticipated Return of Sticky Carpet Gin

Sticky Carpet Gin by Four Pillars pays homage to the nostalgic and congenial atmosphere of a traditional Australian pub, particularly inspired by The Espy in St Kilda, Melbourne. Originally introduced as a limited edition in 2019, the spirit is making a glorious comeback with an updated recipe featuring American-style pale ale.
The new version substitutes roasted dark stout with Little Creatures Pale Ale, alongside a blend of juniper, coriander, barley, cassia, macadamia nuts, orris root, lemon myrtle, honey, lavender, ginger and lemon peel. As reported by Concrete Playground, hops are also suspended in a bag during distillation to extract additional aromatic qualities.
According to Four Pillars Co-Founder and Distiller Cameron Mackenzie, Sticky Carpet has received more requests for a re-release than any other gin in the brand’s lineup.
“The Little Creatures brewers have made a beer that is the benchmark for American-style pale ale, with slightly tropical and resin-y flavours, like Sierra Nevada, my fave US beer,” Mackenzie added, per Concrete Playground.
“In a way, this is the closest we’ve come to making a Jenever-style of gin. It’s a dense canvas of resin-y juniper with deep brown spice notes. There’s a chewy, malty hop character that hangs onto the macadamia nut and it’s a touch fruity with bright citrus notes, too.”
Jenever, also known as Genever, is a traditional juniper spirit originating from the Netherlands. It’s a precursor to modern gin and is typically rye-forward and sweeter, with a distinctive malted grain base. It’s often enjoyed neat or in simple, classic cocktails.
Four Pillars recommends various serving suggestions for its rereleased Sticky Carpet Gin, including a G&T variation called Sticky and Tonic, in a boozy pink lemonade spider with cordial or as part of a lemon, lime and bitters sour.
Sticky Carpet Gin is available for purchase online and in-person from Four Pillars, as well as select bars across Australia. It retails for $88 for a 700-ml bottle.
To celebrate its return, The Espy is hosting a launch party on April 17, featuring complimentary gin and tonics upon arrival, along with live music performances.
