Japanese gin producer Ki No Bi has teamed up with upscale London restaurant Sexy Fish to launch a bespoke gin bottling exclusive to the fine-dining location.
The limited edition 47% ABV spirit is made with Ki No Bi Kyoto Dry Gin’s six core elements — base, citrus, herbal, spice, green tea and fruity & floral — plus a single botanical distillate of almond.
“When we decided we wanted a bespoke gin, no other distillery sprung to mind other than Ki No Bi,” shared Xavier Landais, director of bars for Caprice Holdings, the company that owns and manages Sexy Fish and other popular London restaurants.
“Our Japanese ties, topped with the incredible skills that makes Ki No Bi what it is, made this partnership obvious. We are honoured to be the first venue to have a bespoke gin from Ki No Bi – our Sexy Fish Martinis will never be the same,” Landais continued, per 88Bamboo.
Ki No Bi’s botanical mix includes juniper, orris, Akamatsu wood, yuzu, lemon, sansho pepper, kinome leaf, ginger, green tea, shiso and bamboo leaf. Each of these botanicals is then grouped into their corresponding element group and distilled separately before being blended with Fushimi water.
