Holyrood Distillery Releases Sherry Cask Rum for Permanent Portfolio

Edinburgh’s Holyrood Distillery has recently released a sherry cask edition to its Elizabeth Yard range of rums. The Elizabeth Yard range is usually comprised of single cask editions that are limited in supply but the Sherry Cask rum is the permanent edition that is available year-round. 

The brand is known for its line of gin and a newly released range of whiskies released just last year. Holyrood has quickly gained success in its spirits and has recently secured a £2 million ($2.5M US) investment which will be used to release capital from Holyrood’s maturing cask inventory, primarily to fund new fill casks and expansion to overseas markets. 

The Sherry Cask edition is a blend made from rums sourced from three independent distilleries across the globe including a single-estate molasses rum from the Philippines, high-ester pot still rum from Ghana and cane juice rum from Vietnam. The rums are finished in Oloroso and PX Sherry casks at the distillery in Scotland before being bottled the 42.5% ABV. The rum contains no added sugar, color or flavorings. 

Holyrood Distillery manager, Calum Rae commented, “Our sherry cask edition rum offers a more accessible option for people wanting to explore premium rum. With notes of foamy bananas, raisins, and red fruits, this liquid is perfect sipped neat, and stands out like an island in the storm when mixed into a cocktail.”

 The Sherry Cask Edition will be available to buy from the Holyrood Distillery website with an RRP of £34 (US$43).
