Sierra Norte Single Barrel Yellow Corn Whiskey is distilled in Oaxaca, Mexico, by Scorpion Mezcal S.A. de C.V. It features a mashbill of 85% native Oaxacan yellow corn and 15% malted barley. These ingredients undergo milling in a hammer mill, fermentation in open stainless steel vats with natural yeast and a two-step distillation process in stainless steel pot stills followed by slow distillation in copper pot stills. Aged for a minimum of two years in French oak barrels, it is bottled at 90 proof. It is imported by Caballeros Inc./Park Street Imports, Miami, FL.
It's bright and lively, with notes of lemon peel, vanilla, coriander seed, and hints of malt. The finish fades fairly quickly, leaving a light note of jasmine.
Aged for a mere 10 months in French oak, Yellow has swirling notes of blue iris, dried chilies, and fresh linen around a core of plump corn, with tangy marmalade, maple syrup, pepper, and a spiced-honey finish.
