Montelobos Tobalá is a joven mezcal produced in San Nicolás Huajuapan, Puebla, under the guidance of maestro mezcalero Aarón Alva and directed by Iván Saldaña. Crafted from tobalá agave, it is roasted in a conical underground brick pit oven fueled by encino and tepeguaje wood. After roasting, the agave is milled with a mechanical shredder and undergoes wild fermentation in open pine wood vats without added yeast or nutrients. It is then double-distilled in copper stills.
Delicate white flower and coconut aromas lead into a jalapeño-laced palate overlaid with nutty sweetness. The bracing, citrusy finish is mouthwatering.
New, enchanting flavors abound with every captivating sip; complex, creamy, fruity, and spicy notes are expressed with each welcome return to the glass.
