El Buho Espadín Puro Capón Mezcal is made in Santiago Matatlán, Oaxaca, from espadín agave planted in 2010 and left in the field for over a year after sprouting. The plants are cooked for seven days, mashed with a horse-drawn tahona and fermented for 10 days before undergoing two distillations. Produced by Octavio Jimenez Mendez and his son Octavio Jr.
