Granja Nómada Tepeztate Mezcal, produced in Oaxaca, Mexico, uses 20-year-old agave marmorata. The agaves are cooked for 6 days in an earthen pit oven, crushed with a tahona, fermented in wooden vats for up to 15 days and double distilled in copper stills.
