Granja Nómada Tepeztate-Espadín Mezcal, produced in Oaxaca, Mexico, uses 8-year-old espadín and 20-year-old tepeztate agaves. The piñas are cooked for six days in an earthen pit oven, crushed with a tahona, fermented in wooden vats for up to 15 days and double-distilled in copper stills.
