Del Maguey Ibérico is produced in Santa Catarina Minas by Florencio Carlos Sarmiento, Florencio Carlos Vasquez, Luis Carlos Vasquez and Luis Carlos Martinez. Made from espadín agave, it has an ABV of 49% and is distilled in a clay still. Wild mountain apples, plums, red plantains, pineapples, almonds and Ibérico ham are added during the third distillation.
The body is beautiful. Racy with notes of cracked black pepper, the spicy body is tempered by a melange of flavors that include orange peel, grapefruit, nougat, and vanilla. That smokiness rushes back up on the finish, along with notes of camphor and incense.
It tastes of savory smoke, ash, baking spices, butterscotch and a bit of that grilled fruit that seduced us on the nose. This mezcal drinks like a meal in of itself, but why don’t you go ahead and pair this with some Ibérico ham for the ultimate pairing.
