The flavor comes across with more intensity than the aroma alone. The first thing I notice is a sweet earthy flavor, which reminds me of freshly cut grass. This is followed by a mild lemon note that seems to be mixed with some other dried fruits — which would make sense from the time spent aging in the sherry barrels.
The palate starts quite nutty (roasted hazelnuts, cashews, walnuts, almonds) backed by tangy dried prunes and apricot. This somehow mixes with more of that veggie compote flavor characteristic along with milk chocolate, clove, cinnamon, and cayenne pepper.
Aromas and flavors of frosted dates and walnuts, yellow pepper, hint of kid leather, and farmer’s cheese with a silky, crisp, dry-yet-fruity medium body.
