Manuscrito Blanco High Proof, also called Chapter Two, is a blanco tequila made at the El Sabino Distillery in Jesus Maria, Jalisco. It is made from single estate 100% Blue Weber agave harvested at 6 to 8 years, cooked in a stone brick oven and fermented open air with native yeast and fibers. It is twice distilled in copper pots, bottled at 51.55% ABV and sells for around $55 to $70.
