In the Welsh Wind Cask-Aged Rum is a limited-edition Welsh rum produced by In the Welsh Wind Distillery. The expression began as a white Guyanese rum placed into a 200-liter red wine cask in 2020 and left to mature for about 18 months. According to the producer, the aging process developed notes of wood spice, white chocolate, lemon curd and yellow raisin. The release followed the distillery’s earlier cask-aged rum, which featured orange and spice additions matured in heavily charred American oak.
