Released in September 2025, this is a release in Still Austin's Bottled-in-Bond line, which is composed of four bottlings, each dropped in a different season. This is the fall release. Now at seven years of age, this bourbon was, at the time of its release, the oldest whiskey ever released by Still Austin, the beloved craft distillery based in Austin, Texas.
Bottled at 100 proof per Bottled-in-Bond regulations, this bourbon is distilled from a mashbill of 70% white corn, 25% rye and 5% malted barley. It has a suggested retail price of $80 per 750-milliliter bottle.

The nose balances dark fruit with spice. Cinnamon, gingerbread, frosting, chocolate-covered cherries, espresso grounds.
Moderate mouthfeel and a lovely flavor profile of butterscotch, marzipan, plum, hefty oak, tannin and tobacco.
Tobacco, oak, black pepper, cinnamon, vanilla.
A lovely oak-forward bourbon that showcases the impact of Texas’ climate. Still Austin's Bottled-In-Bond series is one of my favorite regular-release annual collections in the American whiskey scene, and while the fall release isn't the standout of the series (that honor has very clearly belonged to the summer's Red Corn Corn Bourbon, in my opinion), it's a great bottle.
A question that came to mind while writing about this release: How old will Still Austin go with these whiskeys? Thus far each release in the series has been aged one year longer than its predecessor from the year before (similar to what Pinhook Bourbon does with its Vertical Series). Now at seven years of age, this whiskey is reaching great maturity, particularly when you consider the impact of Texas' climate. Will this bourbon reach 8 years old in 2026, 9 the next and 10 by 2028? Or will Still Austin determine it's slipping into over-oaked territory by then? I certainly don't think it's at that point yet, but given the Texas heat, it might be approaching that threshold within the next few years.
