Released in April 2025, The Hearach of Château Biac is a limited-edition single malt exclusively aged in sweet white wine barrels in collaboration with the Bordeaux wine makers of Château Biac. The Secret de Château Biac is a sweet white wine "liquoreux" produced in very limited quantities by Château Biac, an independent vineyard that dates back to the 17th century. Bottled at 50% ABV, non-chill filtered and without artificial covering, the whisky is lightly peated (12-15 ppm). Priced at $150, only 204 bottles were released in the U.S.

  • Nose:

    The nose is not as sweet as I expected given the description of the wine barrels it aged in — on the nose, it reads more as a white-wine acidity than a sweet wine. Vanilla, graham cracker, white wine grapes and light grains, plus some light peat.

  • Taste:

    Moderate mouthfeel. A bit sweeter here, but not at all overbearingly so. This is very well-balanced, light, refreshing and delicious. Buttery Chardonnay character, vanilla, oak, blueberries and cinnamon.

  • Finish:

    Satisfying buttery finish that kicks up the white wine character. More blueberry and vanilla, plus pepper and a bit of leather and peat at the end.

  • Overall:

    A delicious, satisfying and superbly balanced scotch.
