This is the first batch of Wood Hat Spirits' WHO-8 Missouri Straight Bourbon Whiskey. Distilled from a wheated bourbon mashbill, the highlight of this whiskey is the corn it's made from. WHO-8, which stands for Wood Hat Orange #8, is an orange corn varietal bred by Wood Hat founder Gary Hinegardner. The distillery is calling it "the first corn bred for bourbon." This bourbon was distilled by Wood Hat Spirits in New Florence, Missouri, and bottled at 100 proof. According to Wood Hat's website, it's priced at $91.54 per 750-milliliter bottle.

  • Nose:

    The nose is distinctive, sweet, dark, musky and fairly complex, with confectioners' sugar, cornbread, cherry and a bright, tart candied note akin to Fun Dip or Nerds.

  • Taste:

    Phenomenally thick, creamy viscosity on the palate, which delivers flavors of cornbread, medicinal cherry, blueberry pie, custard, tobacco and minerality.

  • Finish:

    The finish is medium to long, opening with chewy cornbread, which is followed by more of that medicinal cherry, tobacco, barrel char, cocoa, cappuccino, a bit of menthol and vanilla bean.

  • Overall:

    Clearly, Gary Hinegardner's gamble on his home-grown corn has paid off, because I've never tasted a bourbon quite like this. There's a dusty-grain note that hovers over the pour, but beneath that are some lovely sweet notes. The flavor is incredibly distinctive, but what truly blew me away here is the mouthfeel, which is milkshake levels of thick. Wood Hat approaches its craft with a scientific, experimental approach, and I'm happy to report the WHO-8 corn is a smash hit. The bourbon industry will be better for Hinegardner's work, which is truly important
