Campari Transforms Birthplace of Its Iconic Bitter Liqueur Into Underground Bar Drenched in History

On Tuesday, 108-year-old bar Camparino in Galleria introduced Sala Gaspare, a subterranean establishment paying homage to the man behind iconic Italian aperitif Campari. Situated in the heart of Milan, Italy, this newly unveiled underground bar allows guests to delve into the heritage of the legendary brand with a drink in hand.

For the inaugural public opening, Sala Gaspare, formerly the private laboratory of Campari’s founder, Gaspare Campari, discloses its historic significance. According to a press release, the space served as the cradle where Gaspare Campari meticulously honed the recipe for his renowned herb-infused liqueur.

Under the guidance of Stefano Agostino, the bar provides an intimate setting for a curated cocktail journey, accommodating up to 12 guests.

During their visit, patrons will embark on an expedition featuring historic recipes sourced from vintage books, reimagined with contemporary ingredients. The subsequent phase introduces cocktails inspired by the distinctive aromas and elements that characterized Gaspare Campari’s production of cordials, bitters and vermouths. The final portion of the experience showcases classic cocktails such as the Negroni and Boulevardier, crafted with vintage liquids from the 1950s onwards, which are no longer in production.

Additionally, each cocktail is presented with a side of small snacks prepared by the chefs in the Camparino kitchen.

Designed by the Vudafieri-Saverino Partners, Sala Gaspare blends history with modernity, utilizing wood paneling reminiscent of traditional Milanese salons and historic palaces. A balance between past and present, the design aims to underscore the enduring connection between Campari and Milan.

Tommaso Cecca, Head of Mixology at Camparino, expressed enthusiasm for Sala Gaspare’s opening.

“The unveiling of Sala Gaspare marks an exciting chapter in Camparino’s rich history,” Cecca said in the press release. “The bar’s meticulously crafted menu celebrates the legacy of Gaspare Campari and offers guests a unique opportunity to enjoy the iconic flavors that have defined Campari for over a century.”
