Dry Fly Cask & Release Wheat Whiskey is produced in Washington and bottled at 45% ABV. Part of a barrel exchange series, this whiskey begins with a 3-year-old straight wheat whiskey that is finished for one year in barrels previously used to condition beer. Multiple versions exist, with one finished in barrels used by Lumberbeard Brewing for its 14.2% Black Daylight Imperial Stout, and another finished in barrels from Pelican Brewing’s Captains of the Coast Wee Heavy ale.
Rich and a little hot on the palate, it's chewy with dry-roasted almonds, cracked walnuts, coffee bean, chai spice, and grilled plums. Mouthwatering on the finish, drawing out chile heat, black pepper spice, chocolate-covered coffee bean, and dry oak.
Notes of nougat, savory oatmeal, and some nutty elements linger as the wood and the grain-driven notes come together in a — sometimes — somewhat uneasy detente toward the end. The finish reminds me of the malty, bittersweet head on a fresh pull of a dark-as-night ale.
