Orgullo Pueblo Viejo Tequila is produced by Casa San Matías in the Highlands of Jalisco using estate-grown Blue Weber agave. The agave matures for 7 to 10 years before harvest, then is cooked for 48 hours at 194°F in traditional ovens. After cooking, it is milled to extract the juice, which is blended with spring water from the distillery. The juice ferments for 72 hours, then undergoes double distillation at low temperatures. After distillation, the tequila is aged in white American and French oak barrels and bottled on-site.
