The Irishman Caribbean Cask Finish is a 46% ABV Irish whiskey made from a mash bill of 100% Irish barley. It combines single malt and single pot still whiskeys, triple distilled and initially matured in American oak bourbon barrels, then finished for six months in Chairman’s Reserve rum casks from Saint Lucia.
The taste has mulled wine-like spices, along with touches of molasses cookies, caramel, honey, and oak. The finish is long and sweet with just a hint of spice.
Vanilla fudge sweetness, bountiful tropical flavors of passion fruit, mango, papaya—though never overtly sweet—it still has plenty of spiciness, with later traces of chocolate, café mocha, and nut butters.
