Tepache Sazón is an alcoholic beverage made in San Pancho, Nayarit, on Mexico’s Pacific Coast. The primary ingredient is ripe piña miel, a variety of honey pineapple known for its balanced sweetness and acidity, sourced from multi-generational growers in the region. Piloncillo, a raw form of cane sugar, is made by crushing, boiling and drying fresh sugarcane the same day it is harvested. Canela, or Ceylon cinnamon, is boiled into a syrup with piloncillo and added before the secondary fermentation.
