This is the 2025 bottling of Still Austin's Bottled in Bond Straight Rye Whiskey. Each season, the Austin, Texas-based distillery releases a Bottled in Bond whiskey; spring is always the rye. Released in March 2025, this whiskey is distilled from a mashbill of 100% Texas-grown brasetto rye and bottled at 100 proof, per Bottled in Bond regulations. A blend of 4- and 5-year-old whiskeys, it is available at a suggested retail price of $79.99.

A bit of heat on the nose. Rye spice meets dark fruit: Luxardo cherry, blackberry, Fiji apple, cinnamon sticks, candied ginger, clove, French toast.
Velvety mouthfeel with some heat. Lovely apple note from the nose remains, joined by honey, cinnamon, ginger, coriander, allspice, waffle cone, plum and touch of bitter tannin.
The finish is long and kicks off with pepper, cinnamon, cloves and a touch of custard, plus more blackberry and cherry, followed by some tannin
Wow! This is a delightful rye. It’s rich, deep, dark, layered and delicious. Plenty of spice and herbaceousness are here as you'd expect, but the nuance and sweet notes are wildly impressive coming from a 100% rye mashbill that spent only 4-5 years aging. After tasting, I came across a video from Still Austin in which Master Distiller John Schrepel shared something that may help explain just how this whiskey is so good. Schrepel shared that unlike 2024's release, 2025's was proofed down to 105 proof before its final year of aging, which, according to Schrepel, led to a whiskey that's soft, sweeter and a bit less oaky and tannic. This is a notable improvement over last year's batch and the best rye whiskey to come out of Still Austin to date.
