Siembra Valles Ancestral Blanco is produced at Tequila Cascahuin in Jalisco, Mexico, using single estate blue weber agave. The agave is cooked in an earthen pit, hand-crushed and fermented in wood tanks. It is double distilled in Filipino-style wood and copper stills and stainless pot stills with copper coils, then bottled unaged at 50% ABV.
All together, this turns out to be a difficult spirit to put down, a complex and exciting experience that makes you rethink the very nature of what tequila can be. Get some.
