Palomo Espadín Destilado con Café is a coffee-distilled mezcal made by mezcalero Carlos Mendez Blas in Santiago Matatlán, Oaxaca. It uses espadín agave that is cooked in an underground pit, milled by horse-drawn tahona and double distilled. A third distillation follows a four-week maceration with Oaxacan coffee beans. It is bottled at 46% ABV and sells for around $50 to $65.
