Georgia 7 Year Single Cask Rum is a molasses-based rum distilled in Georgia in 2017 and aged seven years in a 53-gallon ex-bourbon barrel. Bottled from a single cask at 57.9% ABV (115.8 proof), the release is limited to 192 bottles in 750 ml format and priced at around $86.
The rum is intended to reflect Georgia’s historical ties to sugarcane cultivation and Southern distilling traditions. According to the producer, it shows a barrel-driven profile with notes of almond, marzipan and honey.
This is fine. That honey note leans heavy for me and then on the finish it gets a little too aggressive with the pepper notes. I think that folks who are more into whiskey would be fans of this one, but I'm left wanting more overall.
