Daniel Weller Spelt Wheat is the second release in the experimental Daniel Weller series from Buffalo Trace Distillery. Produced in Frankfort, Kentucky, the wheated bourbon replaces rye with spelt wheat as the secondary grain to explore how individual wheat varietals influence flavor. The whiskey is matured for 10 years and bottled at 94 proof (47% ABV). Daniel Weller Spelt Wheat launched in March 2026 with a suggested retail price of $549.99 for a 750 ml format.

  • This is good whiskey that really grew on me during my second tasting. It’s incredibly distinctive — I’ve tasted a great many wheated bourbons in my day, and this doesn’t remind me much of any of them. It has a great viscosity and a nice long finish that goes on for ages. The flavor profile is savory, earthy and nutty and reasonably complex.

  • On the palate, dry cocoa powder and hazelnut praline lead the way. The mid-palate brings in whole-grain toast and dates. It starts off dry, almost powdery across the mouth, then gradually turns more expressive and juicy as it sits.

  • Nose:

    Extremely wheat heavy nose — very distinctive. Reminds me a bit of triticale. The nose is very grainy with a pop of bubblegum adjacent sweetness. The grainy character comes through with fresh grains, leather, popcorn, buttered toast. Behind the wheat there’s a delicate fruity character — overripe apples, peach cobbler

  • Taste:

    Excellent viscosity that’s not overly thick but is pleasantly silky. Super wheat heavy — sourdough bread, fresh biscuits, lemon peel, leather, olive oil, peppercorns, stewed apples, light tannin. There’s a lovely nuttiness at play here that comes through with almonds, walnuts and hazelnuts .

  • Finish:

    The finish is long and satisfying. It leads with sourdough toast dripping with melted butter and follows with apples and pears, cinnamon, walnut husk, leather, toasted almonds and cocoa powder.

  • Overall:

    This is good whiskey that really grew on me during my second tasting. It’s incredibly distinctive — I’ve tasted a great many wheated bourbons in my day, and this doesn’t remind me much of any of them. It has a great viscosity and a nice long finish that goes on for ages. The flavor profile is savory, earthy and nutty and reasonably complex. The $550 asking price is a tough sell, but hey, it’s a limited release from Buffalo Trace; folks will buy it, and the market is the market. I do think it drinks excellently at 94 proof, but at that price I might be inclined to wish for a bit higher.
