NON1 Salted Raspberry & Chamomile is made from freeze-dried Tasmanian raspberries that underwent a 48-hour cold steep to remove 85% of the water molecules from the fruit. Chamomile was used for tannin in addition to raspberry skins, and salt from the Murray River adds a bit of salinity. Verjus from Semillon grapes in Australia's Barossa Valley was added to increase this wine alternative's acidic profile.

  • Nose:

    Freshly-picked raspberries, with a distinctively honeyed profile from the chamomile. Bright lemon zest keeps one's senses a-tingle. This is definitely channeling poolside sipper.

  • Taste:

    Wow. The nose underpromises the palate of this complicated wine alternative. Raspberries with a wallop of maritime salinity and plenty of bounce from those bubbles. NON's distinctive freeze-drying process adds a bit of tannin, giving this zero-proof wine alternative really pleasant grip and structure. I'll admit, this was very surprising. I wouldn't compare this to the lightness of a Provençal rosé; the raspberries add a depth that makes this similar to a grenache-driven rosé. From Spain, perhaps? Picture cherry fruit rollups with some leathery backbone. Impressive!

  • Finish:

    Short, crisp and food-friendly. If I'm looking for the quintessential zero-proof sparkler to pair with charcuterie, I'd start here.

  • Overall:

    A really strong start from NON. Though I wished the nose alluded to more of what was to come in terms of palate, it's a very solid wine alternative. As a bit of a wine alternative skeptic, I'll admit I was very impressed by the structure and grip of this zero-proof rosé alternative.
