El Buho Cuishe Mezcal is crafted in San Pablo Huixtepec, Oaxaca, from wild cuishe agave, which matures in 12 to 15 years. The agave is cooked with its trunk for seven days in a stone oven, fermented for nine days in pine vats with wild yeast and distilled twice in copper stills. It is then rested for 12 months in stainless steel and bottled at 48% ABV. Produced by Maestro Mezcalero Octavio Jimenez Monterroza.
