Agave de Cortés Joven Mezcal is produced in Oaxaca, Mexico, using espadín agaves. The agaves are cooked in an earthen pit oven, crushed with a tahona, fermented in open-air wood vats with native yeast and then distilled twice in small copper pot stills.
