This is a Papalote distilled by Defino Tobon Mejia, and is bottled by 5 Sentidos. Featuring a single distillation, this naturally fermented run produced 45 liters. This bottle was a Mexico only bottling, so I'm looking forward to diving in. Let's get to it.

  • This is pretty good. Interesting and unique but not a particular favorite of mine. That said, there are no major flaws here.

  • Nose:

    Vibrant and pungent. Latex paint, beef bouillon, sweet citrus and limestone. Meaty, mineral forward and fruity. Faint cotton candy sweetness.

  • Taste:

    Sweet cream and orange. Medium on the palate, some minerality and wood smoke. Less complex than the nose but entirely pleasant.

  • Finish:

    Smoky, a hair bitter and sour, woody. The paint note is back, and while there is a vanilla and cocoa sweetness, it isn’t as vibrant as the nose.

  • Overall:

    This is pretty good. Interesting and unique but not a particular favorite of mine. That said, there are no major flaws here.
