This is an Espadin and Tobaziche ensamble from Apolonio Ramirez in San Agustin Amatengo. It is distilled using a copper refrescador. I don't have the ABV for this, as it came direct from Apolonio in Oaxaca. Let's dive in.

  • Nose:

    Pepper, clay, latex paint, minerality. Prickly pear and wood.

  • Taste:

    Big smoke, pineapple, grilled peppers, lactic, sweet and ashy. Rich and powerful.

  • Finish:

    Long, powerfully ashy, lots of minerality, clay and pear. Bribe and pepper.

  • Overall:

    Powerful and complex but dominated by smoke. Very good, but some more balance could easily push it higher.
