Empress 1908 Indigo Gin is distilled in copper pot stills with eight botanicals, including butterfly pea blossom sourced from a tea blend served at the Empress Hotel in Victoria, British Columbia. Its hue shifts naturally to lavender, pink or fuchsia depending on the mixer. The profile combines juniper, grapefruit peel, rose petals and a signature black tea blend from the Empress Hotel, sourced from Assam, Kenya, South India, Ceylon and China.
Despite the color, don’t come to Empress 1908 Gin expecting something floral or violet-flavored. This is a mixing gin with a strong emphasis on showmanship.
The aroma is relatively neutral and the palate is mild and malty, with hints of coriander, orris root and white pepper. But it's really all about the eye-popping blue color and all the party tricks that can be performed with this gin.
Once you get past the relatively shocking violet color of this spirit, you are left with a very serviceable, classic London Dry gin with a burst of floral character.
