Plantation Rum Under the Sea Guyana 2007 comes from molasses distilled in Guyana in 2007 using Port Mourant double wooden pot still and column still distillation after a one-week fermentation. The rum aged 13 years in 200-liter ex-bourbon casks in Guyana, then 2 years in 350-liter Ferrand casks in Europe. It was bottled at 51% ABV as part of the 2022 Vintage Series.
It’s a bit brighter on the coconut-laced finish, though I never felt this totally gelled the way the other rums in the collection do, the fade-out taking a somewhat winey detour.
