Palomo Espadin is a joven mezcal made by mezcalero Carlos Mendez Blas in Santiago Matatlan, Oaxaca. It uses Espadin agave that takes about 9 years to mature. The agave is cooked in an underground pit oven, milled by horse-drawn tahona and double distilled in copper stills. It is bottled at 46% ABV and sells for around $35 to $40 for a 1 liter bottle.
