Released in Winter 2025, this bourbon is a member of Still Austin's Bottled In Bond series, a seasonal collection that annually releases a different expression each season. Winter's is always the Blue Corn Bourbon. Distilled from a mashbill of 51% corn (26% blue corn, 25% white corn), 44% rye and 5% malted barley, this whiskey was aged for six years before being bottled at 100 proof per Bottled In Bond Regulations.

  • Nose:

    Lovely nose full of butterscotch, crème brûlée and apple bake, plus lemon peel, tapioca, cinnamon and clove.

  • Taste:

    Moderate mouthfeel. The flavor profile is truly beautiful and well balanced. Oak, custard, banana cream pie, cookie dough, brown sugar, cherry, gingerbread, cinnamon.

  • Finish:

    Cocoa powder, oak, cherry.

  • Overall:

    This has taken a big step up from last year’s Blue Corn bourbon in terms of flavor. It still sits in third place of the four Still Austin Bottled-In-Bond releases in terms of my favorites — after summer's spectacular Red Corn Bourbon and spring's Rye (which also took a big leap forward in 2025). All in all, this is delicious and excellently balanced bourbon. I'm a big fan.
