Al Zumot Arak is a Jordanian spirit distilled from purified grape alcohol and aniseed in a small pot still, then triple distilled and matured in baked clay jars made in Beit Shabab. The jars’ porosity allows gradual oxidation and evaporation during at least one year of aging, leaving about 70 percent of the original volume and concentrating the spirit.
