Studio Null wines begin as traditionally fermented, fully alcoholic wines made from hand-harvested grapes. The alcohol is then removed through a low-temperature vacuum distillation process that preserves the wine’s body and aroma. After dealcoholization, the wines average 0.3% ABV, down from the typical 12–14%. Studio Null Sparkling Verdejo is a delicately sparkling, non-alcoholic white wine made from Verdejo grapes grown in the Diez Siglos vineyard in Rueda, Spain.
Notes of citrus and melon are prominent, with a slight tropical bent to the finish. Best when it’s freshly poured (use a flute and small quantities), but agreeable even after it flattens.
