Produced in Río de Ejutla, Oaxaca, Bozal Ibérico is a pechuga-style mezcal made with espadín, mexicano and tobasiche agave. The agave is roasted in an underground oven, then milled, fermented and distilled in copper. During the second distillation, a cut of seasoned pork along with herbs, spices and seasonal fruits are added. It is bottled at 47% ABV under NOM-O472X and produced by Bozal Mezcal, which is owned by Maguey Spirits.
