St. George Absinthe Verte, the first legal American absinthe released after the U.S. ban was lifted in 2007, is made with brandy, star anise, mint, wormwood, lemon balm, hyssop, meadowsweet, basil, fennel, tarragon and stinging nettles. Bottled at 60% ABV, it is priced at around $61.99 for a 750ml bottle.
At 120 proof, St. George immediately hits the head, and if you’re going to see the green fairy after any absinthe out there, I suspect it will be with this one. It’s hard to find, but I’m sure true absinthaholics will appreciate the results of their chase.
The yellow-green liquid louches to milky yellow. With plenty of star anise evident on nose and palate, look for hints of lime, lemon balm, fennel, tarragon and a gingery tinge that yields to a long licorice finish.
